Sourcing from Major Markets

We select our beans directly from the world’s most important markets: New York for Arabica and London for Robusta varieties. This choice ensures access to the best raw materials available.

Artisanal Roasting

Aroma is a delicate entity: it reveals itself fully only when treated with care. Decades of experience have taught us that there’s a significant difference between roasting beans at 500 degrees for 3 minutes and slow roasting at 220 degrees for about 17-20 minutes.

Slow roasting preserves the natural essential oils in the beans, which are crucial for the deep flavor and aroma of the coffee, while also reducing bitterness and giving the brew exceptional smoothness. This difference may seem subtle, but the aroma speaks for itself: through slow drum roasting, without additives like water or artificial flavors, we create coffee with minimal bitter substances, roasted to the core.

Cleaning and Resting:

After roasting, the coffee is cleaned again and allowed to rest in silos for one to three days. This resting phase is essential: only patience fully reveals the coffee’s strength and complexity.
